1 large egg
1 medium zucchini

½ cup milk
½ cup plain Greek yoghurt
½ cup semi-sweet chocolate chips (optional)
Pre-heat oven to 180 degrees Celsius.
Peel and shred zucchini.
Remove excess water from the shredded zucchini by squeezing it in a paper towel.
Whisk together the whole wheat flour, unsweetened cocoa, baking soda, and salt.
Using an electric mixer, combine oil, honey, vanilla, egg, and yoghurt until smooth.
Peel and smash the banana.
Add smashed banana, shredded zucchini, and milk.
Add dry ingredients slowly, mixing until combined.
Fold the chocolate chips in if desired.
Coat a muffin tin with 12 spaces with non-stick baking spray.
Pour muffin batter into the 12 muffin spaces evenly.
Bake for 20-25 minutes.
Use a toothpick to see if the muffins are done by inserting it in the middle of a muffin. When the toothpick comes out clean, the muffins are finished.
